Matcha Scones

On the fourth day of holiday baking the food fairy made me :  the greenish grinch matcha scones!

If you didn’t figure it out by now I really love matcha. I previously made these for a friend who requested them and they showed up on her doorstep just in time for final studying. Funny how that happens when the food fairy is around!

If you make these, young and old alike will be forever grateful for your contribution… Maybe make them for Christmas morning or to leave Santa on Christmas Eve instead of the typical milk and cookies. You can’t go wrong with colourful treats !

Don’t fret, they don’t taste strongly of matcha if that isn’t your cup of tea . The more matcha you add the more it’ll taste. It tends to be more on the citrus side because of all the wonderful zest you will use.

Here’s the scone recipe :

  • 2 cups of all purpose flour
  • 1/2 cup Greek yogurt
  • 1 tbsp of fresh lemon juice
  • 1/3 cup of brown sugar
  • 1/2 cup of frozen butter
  • 1 egg
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 1/4 tsp of baking soda
  • 1 tbsp of matcha tea
  • Zest of  1 lemon
  • Zest of 1 lime
  • Zest of 1 orange
  1. Place a sheet of parchment paper on a baking sheet.
  2. Preheat oven to 400ºF
  3. In a large bowl, mix all the dry ingredients. Use a cheese grater to shred the butter and mix in with the dry ingredients. Add the zest to the dry mix.
  4. In a small bowl, whisk the egg, yogurt and lemon juice.
  5. Add wet ingredients in with the dry ingredients.
  6. Mix until it forms a dough. With floured hands, knead the dough until it is well mixed.
  7. On a floured surface cut shapes using a cookie cutter or a round glass and place the scones on the parchment covered baking sheet.
  8. Place sheet on the lowest rack and bake for 15 minutes or until golden.
  9. You know you want to eat them as soon as they come out of the oven but you’ll have to wait until they have cooled…

We had a touch of hope for a white Christmas at work tonight looking through the window as the snowflakes fell with the Parliament and the town lit up as they played White Christmas in Southam hall… But then it stopped and we cried.
